โโถIngredients (for 4 ramekins with a diameter of 9cm)
280g whipped cream
50g milk
40 g sugar
60 g yolk
Half a vanilla bean (if you don't have one, substitute 3g vanilla extract)
1) Add about half of the total sugar to the yolk side and mix until there is no rattling.
(Sugar distribution does not have to be exact. Put it in the eye area.)
2) Heat the vanilla bean, whipped cream, milk, and all remaining sugar until the edge of the pot boils.
3) Pour the heated liquid little by little on the yolk side and mix with a whisk.
4) Please filter it through a sieve. (You can skip it if it bothers you. Omitting it didn't make a big difference)
5) Put the dough in a bowl and bake it for about 30 minutes at 150โ (302โ) in a hot water bath.
* In the case of a convection oven such as Smeg/Unox/Sierra, cover the surface and bake. If you do not cover it, it will burn on the top and form a film, which will make the texture worse.
* In the case of a general small household heating oven, you can bake without covering the surface.
6) Cool in the refrigerator for 3 to 4 hours until it gets cold, then sprinkle sugar on the surface to caramelize.
