Ordinary people only know the spicy tomato pasta arabiata.
There is a pasta called Amatriciana with salted pork belly meat pancetta and peperoncino.
It's my soul food and I often make it when I'm depressed. The only regret is that there aren't many places that sell pancetta.
It's made with regular bacon. The flavor is different, but that's a pity.
