ㅤTried this out and it turned out super well! The hollandaise stays
intact for a super long time, it's truly foolproof. The hardest part of
this whole process is actually just poaching the eggs (for me anyway).
The homemade muffs were exceptionally good, used olive oil to fry them
because I didn't feel like getting ghee and it was still great. Canadian
here, so I used peameal bacon - arguably the greatest thing Canada has
that the US doesn't.
